A few years ago we realized that Kyle has an intolerance to wheat and gluten. The first year was hard trying to find things he could eat that actually tasted good. The second year got better as more and more things gf became available. Going into year 3 we are starting to get the hang of it. It has been a long process. Every time I actually make something from an old recipe gf and it turns out well, I want to do a happy dance in my kitchen. I have made so many horrible things in the past that I actually made Kyle hate pizza until recently. Some of the gf pizzas I tried and made were just down right horrible. One of the foods that Kyle has missed the most is my chocolate chip cookies. GF chocolate chip cookies from the store are usually just ok. They hit the cookie spot but nothing can compare to warm cookies out of the oven. This past weekend I finally got my old chocolate chip cookie recipe to work gf. Kyle was one happy little guy. Here is the recipe!
GLUTEN FREE CHOCOLATE CHIP COOKIES
2 sticks of butter (softened)
3/4 cup brown sugar
3/4 cup white sugar
1 egg
2 t. vanilla
2 1/2 cup King Arthur Gluten Free Flour Mix
1 tsp. xanthan gum
1 tsp. baking soda
1/2 tsp. salt
1 bag chocolate chunks
Beat butter, sugars. Add egg and vanilla. Beat again until smooth. Add flour mixture. Mix and stir in chocolate chunks. Bake 350 degrees for 8-10. I have found that gluten free baking takes a different cooking time. You have to play around with it according to your oven.
